Researching new gaming build - Flexible budget around $1,000

Approximate Purchase Date: Next few months.
Budget Range: About $1,000 (Flexible). Willing to pay more for a quality build that makes sense.
System Usage: Primarily gaming.
Parts to Upgrade: Full System rebuild outside of monitor (24" 1920x1080) and case (Antec Twelve Hundred).
Do you need to buy OS: No, I have Windows 7 Home Premium (Not OEM). I'm trying to outlast Windows 8/8.1 in hopes Windows 10 is worth the wait.
Preferred Website(s) for Parts: Newegg, Amazon (have Prime), and Microcenter is local for pickups. Not opposed to other sources.
Overclocking: I'm intending this to be my first overclocked build.
SLI or Crossfire: No. In prior builds I would plan for future expansion to SLI/Crossfire, but by the time I needed to upgrade a new single card would beat the old cards in SLI. No point planning for it accordingly.
Additional Comments: Hoping for a system that runs quietly. I'm not caring for the looks of individual components. I'm an equal opportunity gamer that plays everything from Civ5 to Modded Minecraft to AAA shooters. I would like to be able to support 2 monitors in the future.
Why Are You Upgrading: Old system is still running pretty well, but is noticeably slowing down compared to the games that are coming out. Last upgrade was about 3 years ago and I'm getting the itch for another upgrade. Pricing out a system so I can pull the trigger when the timing is right.

I've pieced together most of the system, but am not really sure where to start with the power supply. Based on what I'm working with, I'm assuming a 550 or 600 Watt PSU will be needed. Since I want to overclock this build, I know I need an aftermarket CPU cooler. Was initially looking at the Corsair Hydro Series H100i as NewEgg had a refurbished model for $65, but is now listed at $85. Was leaning towards liquid cooling for the CPU for performance/noise, but will take suggestions.

I need new peripherals as well (mine are aging badly). Would like a nice gaming mouse, but don't need anything crazy. (Eyeing the Logitech G700s for $50 on Amazon). Would also like a back-lit keyboard as I'm often gaming in the dark. I need a wireless adapter. I can reuse old speakers.

I recommend for the cooler the Hyper 212 Evo, or if the NH D-14 fits in your budget it will work wonders especially if you plan to overclock.
For your psu, I would go with a 600, corsair has a great deal on one right now, it's 44 with MIR and then 10 bucks off that. It has wifi built into the mobo.
For mouse I recommend the Razer Deather Adder (go with 2013 if you don't want RGB) and the corsair k70 (if it's too pricey they have other alternatives. If you don't like Corsairs, then Razer has some good ones as well.
