Does gtx 560 support 1440p @ 60Hz?

each generic card supports a different set of resolutions. You need to see what maximum resolution does each card support, but whatever it may be, it will be written down in the specifications.

At nVidia's website, it says that the GTX 560 (not Ti) GPU supports 1440p resolutions, but that doesn't mean that it can play games fluently at that resolution.

Maximum Digital Resolution 2560x1600
Maximum VGA Resolution 2048x1536

You can produce images in that resolution but you won't be able to do it at 60FPS in a game. On the desktop and in other applications other than games, yes.
