So basically, this machine will be used to do the above things.
Questions:
3D Rendering/Editing: Will the sacrifice of a core i7 w/ hyperthreading for i5 and a high end GPU be huge in these situations esp. editing?
That's really my only question.

Get the 4770k. It can be faster up to 30-35% in 3D rendering.
GTX780 should be closer to $500 now, after recent price drops. This gives you $50 of savings and you surely can afford additional $50 for the $2,5k rig.

One thing I would change, is the display. For working with graphics and 3D I would recommend a bigger 27" monitor, preferably with 2560x1440 resolution. However it is difficult for me to recommend anything below $500 price point.
