I have a Micromax Canvas Knight with a Mediatek MT 6592 Processor. Now there is no official CyanogenMod Rom for this device but the Webpage linked below indicates that my device is supported for the ported CM 12.1 ROM. I really wanted to flash an Android Lollipop ROM on my phone as it is capable of handling it. But I really don't want to screw this up as I have only one chance of flashing any firmware to this device. What should I do??

I am unfamiliar with your device.
if you brick the phone, recovery can be a bear without a recovery program installed prior to said bricking.
Some devices have recovery support after rooting. IDK if yours does.
some devices even can be restored if bricked. IDK if yours does.
Some devices can be unbricked via a factory...

given the aprehension in your message I would suggest you wait.
Wait at least until there is a way to unbrick the device. once there is a way for you to recover a botched flash the danger is reduced ti minimal levels.
I never flash anything until I know I won't kill it. a recover method is a must before tinkering with firmware. IMHO

But can I not always flash the stock firmware back if I have any problems??

That being said, I suggest not doing anything until you are sure you can go back to stock if something goes wrong. there are guides for doing what you want but there are different models of the Micromax Canvas Knight, so I cannot point you to the right page. from my research on this thread I think there is a root and recovery for that. So you should be able to do what you want. be careful.
Measure twice, Cut once.
