I'm kinda biased towards JRPGs, so I'd advice FF series, The Last Remnant, YS Series (although graphics are a bit dated), Record of Agarest War / Zero (same note as YS), Recettear, etc....
Retrogaming can also offer some true gems, like Chrono Trigger for example (only God knows how many playthroughs I have there...)
As Y_u_be_like_dat mentioned, the The Witcher series are pretty nice, although I've heard the former episode is a bit more raw and buggy compared to its subsequent counterpart; TW3 is also getting released soon.
Dark Souls and Mass Effect series would make a nice addition too, although they're only partially RPGs. I've also heard awesome things from Dragon Age : Origins and Divinity : Original Sin, or you can wait for Dragon Age : Inquisition, although it's slightly more on the action side.
If you tried Skyrim and liked it, however, you definetly must try Oblivion and Morrowing, despite their dated graphics...there's just so much they left behind for simply more polished graphics...
In any case, most good western RPGs date back to the top-down isometric DOS days unfortunately, so that "Great Graphics, Classes and Skill Animations" kinda makes it hard to advice games 😛
