ive got 2 Samsung 860evo s 500gb and want to add 2 more ssd. either 2 more of the same or 2 of the 1tb models ca i do this if so what additional cable would i need?

Can you? Assuming you have sufficient ports on the motherboard, sure.

All you probably need are a couple of SATA data cables.
