I believe my previous windows 8.1 was home version.

I have been following this http://www.tomshardware.com/faq/id-3567655/clean-installation-windows.html

And got to a point where it asks which version of w10 I would like to install. It lists home, eductation, and pro. Can I just select whichever I want, and choose pro? In the link, it says
"For most users this will, and is recommended to be, Home version. Educational and other users should select according to the type of license identified on your product packaging or information. Then, click Next."

Will I get rejected from pro version or something if it detects my previous version wasn't pro?

Home can only update to Home.
If you try to install Pro, it will not...

Home can only update to Home.
If you try to install Pro, it will not activate. You'd have to purchase a valid Win 10 Pro license...~$140.
