Question rx 590 fps problem help :(

I have a rx590 (r5 2600-16gb 3200mhz) and i was plaiyng minecraft after a long time when i saw that my graphic card at max setting only did 100\120 fps (they wasnt locked) when it should do 500/600 fps and i dont understand why, could someone explain? The graphic card is new (i'm not an English speaker anyway sorry for error etc.....)

Hdd: 1tb ( i have a ssd too but minecraft isn't there)
gpu: Rx590 FatBoy
PSU: 600W sharkoon Bronze
OS: Window 10 Pro
