I'd like to build a system capable of driving a 60hz 3440x1440 monitor that I can use for gaming and light CAD/CAM work. It's going to be the main system for my sister and I tried to get quality parts without bringing the price up too much because the machine will be running for 14+ hours everyday. I would have liked to get a 1080TI but the price difference from a 1080 just seems to be a bit much.

When are you planing to buy ? with the new RTX coming out in the soon it probably better for their release as it may drive prices down enough to upgrade to a 1080 TI.

I'd agree with Ikaz if you wait a bit you could probably upgrade to a 1080ti. I might also look at slightly higher wattage PSU if you're going the 1080ti route. It's efficient but I'd still want a 800 or 1KW PSU in a build like that myself.

I was planning to buy around the end of September, early October. I wasn't aware of the new cards coming so I can wait for a bit. Would they be out before the Black Friday weekend in November? That might be a good time to build a system no?

2080/2080ti are on preorder now. Should be sent out in a week or 2. 2070 will be out next. The build looks fine to me. I would hold off on the second ssd if there isnt a specific reason for it.

That build doesn't need more than a 750w like a G3 Evga or Seasonic Focus gold, even with a 1080ti.

OP, with your budget, you can get a 2700x, and a GTX 1080ti, though I am not sure a 1080ti is a great idea, this close to RTX launch.
