The 3400G and 2400G have the same GPU, just the 3400G can clock a bit higher. When it comes to CPU performance figure the 3400G will be around 10% faster than the 2400G since the 3400G is Zen+ and 2400G is Zen for the CPU core.
For RAM you will want minimum 8GB in a 2x4GB kit at 3200MHz. If you go 16GB in a 2x8GB you will be fine for a long time.

How long could I run without a graphics card and would a stock cooler be fine?
 
im going to game with it along with some school work. some games like Minecraft, fortnite, siege with a few others.
While you won't be able to game at 1080p Ultra in new AAA titles, most AAA titles can be run at 1080p Low-Medium settings and be above 30FPS. If you were to go to 900p or 720p you should be able to run AAA titles at ultra settings over 60FPS. In the end the 3400G has the best integrated GPU of any mainstream CPU out there right now.

Solution
Don't bother with the 3400g save the coins and get the 2400g. Plus B450 boards are guaranteed to work straight out of the box. Also get 2x8GB RAM at at least 3000 Mhz. I Had a 2400g for a bit when the mining craze was around and averaged 70FPS on overwatch (1080p low), 60 on tomb raider high 1080p, and 53 on Arkham night 768p with everything on low or off. Think it played Minecraft ok and I only played Fortnite for maybe a week and it seemed fine just medium I think can't remember res. Probs 900p.

Oh and 900p BO3 I got 51 with everything low or off apart from AA where I had FXAA on.

I only really play overwatch now on PC the rest is on my switch though. Just dump a 570/80 in later.
