Hi pretty new to PC builds and was just wondering, is this resolution and framerate prone to a bottleneck cause I'm thinking of getting a better monitor to perhaps fix the problem. Something along the lines of 2k monitor 144hz or I am doing something wrong.

Solution
There is always bottlenecking in every gaming system. Otherwise there would be infinite performance.
Don't worry about bottlenecking when picking parts, it's pointless.
Choose a CPU based on the desired framerate. In your case it's 60FPS, where the Ryzen 5 1600 is perfectly fine for most games.
Choose a GPU based on the desired graphical settings and resolution, at that desired framerate. For the majority of games, a GTX 1060 can perform 1080p ultra, 60FPS, so the GTX 1080 is a bit overkill for that, even if playing on Ultra settings in intensive games.
