Just on a sidenote, how on earth are they similarly priced? AN RTX2080 costs nearly the same as Both the 2600 and the RTX2060 combined. If you can get an 8600k thrown in there somehow that makes the options similarly priced. Please, tell me where! I wan't some of that.
Your almost comparing apples to oranges.
The 8600k/2080 combo will wipe the floor FPS wise at 1080p, and at most other resolutions However, the 2080 is massive overkill for 1080p even for a 144hz panel. So WildCards suggestion for the 2070 is a perfect solution, potentially saving some dollars.
PdxPetmonster is also bang on. Knowing exact usage scenarios and a budget, or parts you may have, could help you save money, and get the performance you are really looking for without burning cash.
