I want to build a gaming plus streaming pc which processor should i go with ?

i will be using x264 encoder as well along with nvidia encoder for some games

which will be best for me i am not looking at 3600 as its out of my budget 2700 is also at the border of my budget

i will be buying from ali express
 
what about gaming performance 2600x vs 2700 as 2700x and 3600 are way out of budget
6 cores or 8 is mostly very similar for current games, but the 2700 may be slightly better than 2600x if you're running some other programs simultaneously, e.g., discord, streaming, etc. But future games are also becoming more and more highly threaded so the future proofing bet would be on the more-core solution, within reason.

If it fits the budget, I totally agree go with the 2700. Everything works so much better with more 2 more cores/4 more threads.

But do not compromise on GPU in order to fit it in the budget if gaming performance is a key requirement.
