Most will agree thta 5600x is probably enough for gaming, but editing extra cores will likely come in handy.
I went with 5900x just because I found one first

The Ryzen 7 5800X and Ryzen 9 5900X have very similar performance in gaming.
On multicore dependent tasks (content creation), those extra cores (threads) and the L3 cache of the Ryzen 9 5900X become very useful.
At the moment, there is a $100 price difference between the Ryzen 7 5800X and Ryzen 9 5900X.

5600x if your going to use nvenc streaming
5800x for up to x264 medium
5900x for x264 slow.

So if you have a 2000-3000 series Nvidia GPU it really does not matter. If you are going to use a AMD GPU then I would get a 5800x or 5900x. For video editing you can edit video on them all just with greater processing time (1080p). More processing time means less time to use your computer unless you encode while you sleep. If you want more detailed advice list the programs and streaming settings your going to use.
