[SOLVED] Ryzen 5 5600x for $300, Ryzen 3800X/XT for $320, or i7-10700k for $320?

I've been assembling parts for a brand new PC for some time now, and I've decided that I'd be spending no more than $350 for a CPU. Since the release of the Zen 3 CPUs, I've had great difficulty in deciding on the right part.

So far, it seems like a wash between the Ryzen 5 5600x for $300, the Ryzen 7 3800X or XT for $320, and the i7-10700k for $320. The other components affecting my decision will be 32GB of RAM (number of DIMMS and speed depends on CPU choice), an RTX 3070/Radeon 6800, a 750W PSU, and a 1440p 165Hz monitor.

What makes this decision especially difficult is the vast array of games and applications I have in mind for the PC, of which include:
  • ARMA III Multiplayer
  • Digital Combat Simulator
  • Microsoft Flight Simulator
  • Destiny II
  • Red Dead Redemption II
  • Civilization VI
  • Hearts of Iron IV
  • Kerbal Space Program
  • Counter Strike: Global Offensive
  • Newer Call of Duty Titles
  • Newer Battlefield Titles
  • Moderate Video Editing
  • Moderate Photo Editing
  • AES Encryption
I don't see a need for PCI-e 4.0 for the next year or so, but will this change further down the road?

Which of these should I go for in my new build? Do I grab the 3800x or 10700k for the higher core count, or am I better served by the 5600x's higher IPC?

Bonus Question: Are there any other CPUs I should be considering instead?

At 1440p the cpu choice is almost irrelevant between the three. Google benchmarks to see for yourself.

No wrong choice. I’m running a 3800x at 1440p with a 2070S, it’s awesome.
