Which processor would be better for gaming and over clocking? I would be using a Geforce 1060 6gb graphic card with it, just want to know which processor would be better, thanks.

The 7600K is faster in today's games....today. But, the 4c/4t design is staring to lose it's luster pretty quickly. Even if peak framerates might not quite match the 7600K, I suspect the minimums of the R5-1600 (especially if OC'd to 3.9 GHz) will do very nicely in the most modern games that scale well with more cores/threads, such as BF1....

Fast forward to 6:38 to review assorted gaming comparisons at various resolutions...

Either is likely to be held back by a GTX1060, so either will do pretty well as well.
That said, the display may also be a point to consider: On any 60Hz display any high end system will be ultimately be held back to 60FPS, regardless of specs elsewhere, but a faster display, especially at 1080 rez will benefit from an Intel CPU, assuming the GPU can drive it.

Once Coffee Lake releases 4c/4t will be i3 class. With games starting to use more than 4 threads I just would not buy a current generation i5, they just don't look as good of an investment as Ryzen or Coffee Lake. There are a few up coming games recommending current generation i7's and we have seen some already, ok that's probably a bit overkill but shows the direction things are going. I'm quite excited about the i5 8600k, a true 6 core cpu with the same or slightly better single core performance than the 7700k. As hyperthreading only gives the 7700k at best a 30% performance boost a true 6 core cpu should match it or even beat it.
