I really need a new CPU since my i5-4670k has a dying core and I'm torn between the 2700x and the 8700k and right now there is only £30 different between the CPU's on Scan UK.

I'll mostly be using it for gaming (at 1080p 144Hz with a 1070 Ti, possibly upgrading to 1440p 144Hz at a later date) but I do stream a lot as well and do a small bit of video editing from time to time.

I already have all the necessary parts picked out and ready for order for both CPU's. I just would like to know what CPU is better for my needs as I'm really not clued up on AMD and I'm willing to try something new.

I would go with the 2700x if you are doing streaming and video editing.
Coupled with a 1070ti you will see very little difference in fps when comparing both CPUs, yes the 8700k is going to come out on top with a few more fps if it's oc'ed, this is at 1080p, at 1440p the difference is going to be even less.
The 2700x comes with a pretty decent stock cooler, the 8700k doesn't come with one at all.
If you do want to go into 144hz then the 8700k is the better pick for your use case.

While the 2700x has an advantage in streaming performance, the true bottleneck in that scenario would be the internet connection speed, yours and your viewers.

On average, considering all kind of applications 2700X is better than 8700k (see sumary of all reviews here https://www.3dcenter.org/news/ryzen-2000-launchreviews-die-testresultate-zur-anwendungs-performance-im-ueberblick)

However:
- For gaming 8700k is better than 2700x IF (big IF) GPU is not a bottleneck. In your case a 1070ti will get them closer, and if played at 1440 the difference will be negligible. Your limitation to achieve 144 fps at 1440p with 1070Ti is not the CPU but the GPU.
- For streaming and videoediting 2700X way better than 8700K

Multitasking e.g. streaming and gaming at the same time: 2700x. This has more cores.
pure gaming FPS: I7 8700k. this has faster cores.

1440p 144fps goal: 1070Ti no, 1080Ti yes <-- personal experience. I am using 1080 and I do not get even near 144fps for gpu heavy games.
1080p 144fps goal: 1070-1080 yes, 1080ti could be a bit of an overkill for now
for 1440p 144hz monitor: anything up to 1080 should be ok. Just be aware that you perhaps would not get 144fps on all new AAA games.
I read that you would be upgrading to 1440p 144hz in the future, just do not forget this :)

A 1070ti can game perfectly at 1440p, just depends on what detail you set/expect to achieve your desired fps.
I have no issues gaming at 100+fps with my 1070ti at 1440p in most games.
