Question Ryzen CPU for new Gaming Build - Need Help!

Hey everyone. So in the next month I'll be building my new gaming rig and I've been pretty split on what choice of CPU to go with.

So, in more detail, I'll mainly be using this PC for gaming at 1440p @ 155Hz at Ultra/High Settings (GTA 5 and Flight Simulator 2020 are the decisive games when it comes to my choice of CPU - I think). Whatever CPU I choose I want it to be enough to handle streaming/recording at 1080p. In the near future, I will be using this computer for game development using Unity/Unreal Engine and in general I do heavy multi-tasking. I am going to keep the same rig for as many years as I can, so please keep that in mind.

Whatever CPU I choose, I will be pairing it with an RTX 3070, 32GB of dual - channel 3200Mhz CL16 RAM and an X570 motherboard.

In conclusion and based on the prices in my country that I'm going to attach down below, which CPU would you suggest?
  1. Ryzen 5 5600X -> 320 euros / 380 dollars
  2. Ryzen 5 3600XT -> 225 euros / 265 dollars
  3. Ryzen 7 3800X -> 315 euros / 375 dollars
  4. Ryzen 7 3700X -> 295 euros / 350 dollars

Edit: Oooor, should I just buy a 3600XT and use that extra money for an RX6800?
