Pretty sure the "Pro" models are more oriented towards commercial applications that need 24/7 uptime and lots of read/writes.
I have an Evo, and can tell you the speeds are great, hit advertised benchmarks, and the software is excellent.
For me, the price difference meant a bit of budget stretching let me get the 500GB Evo, versus the 250GB Pro.
Twice the space for "some" more money, and close to the same speeds. More practical for gaming/home user set ups IMO.
The 850 Pro is faster, the 840 Evo is a better value. I recommend the Evo until the price comes down on the 850. Here's a benchmarking site you can check out: http://ssd.userbenchmark.com/

In terms of storage size, the 250-256gb mark is the sweet spot for value right now.

If there's a serious consideration about Read-Write accumulations, add a second SSD - a small, cheap one - and point all your Temp and Page Files onto it. Some 30-60Gb SSD is more than huge for these purposes. That removes most Reads & Writes from the boot drive.
