My son's build...

CPU: I9-9900k
CPU cooler: Corsair H150i pro
Motherboard: ASRock Z390 Taichi
GPU: EVGA RTX 2070 ULTRA Xc
RAM: Corsair Vengeance LPX 32gb(2x16) ddr4 3200mhz
Storage: Samsung 850 EVO 500GB SSD
Samsung 850 EVO 120GB SSD
WD 1TB HHD
PSU: Corsair RM850
Case: Lian Li pc-011 Dynamic
Case fans: 6 Corsair HD120 Pro
Monitor: Dell 27' 2560x1440p 144hz 1ms Gsync
Mouse: Razer Deathadder Chroma
Keyboard: HyperX Alloy Elite RGB
Mic: Yeti Blackout
Headset: Corsair Void Pro RGB

We might keep the 500gb SSD and/or the 1tb HDD.

Would we better off getting a 2tb Samsung 970 EVO+ M.2 or getting 2 1tb 970 M.2's? With price aside which would be better, heat and performance wise? I mention heat because we're also getting a 2080ti and I don't know if that's going to be a factor in heat.

He does all online gaming, and streaming, and wants to record his gameplay. Thank you!

For gaming and streaming the load on the drive is fairly low. For example for this usage even going NVMe compared to SATA makes little difference. I’d go for 2x1TB drives just because I find it easier to segregate data and backup. One can be games that don’t need a backup and one can be important files that do need backing up.

What if we use the 500gb SSD and/or 1tb HDD for backup?

That’s up you. The key point is the configuration is really personal choice, it’s not going to make any noticeable difference in a gaming pc.

Thank you. We'll go with a 2tb EVO 970+ M.2, and probably add a 2nd smaller 1, a 500gb or 1tb M.2 to get rid of the wiring from the 2 EVO 850's and WD HDD.
