Im looking into an SSD and i wondering if i should get a Samsung 850 EVO or a Samsung 960 EVO.

The Samsung 960 EVO is the better value if your board supports booting from an NVME drive. It's only slightly more and much faster. I own them both and use the 960 as my boot drive and the 850 for storage.

I have a h81m-e34 motherboard, would this work. Also could i put some games on the drive and is it easy to put windows on it ?

No, that MB does not support booting from an NVME SSD.
