That is just the form factor.

M.2 drives can be had in either SATA protocol or NVMe protocol.
NVMe is the faster, more expensive one.

What is your budget for this drive?
What other drives will be in the system?

Assuming you are using a Ryzen processor, that slot can take either a SATA based drive OR an NVMe based drive.

For your stated use, an NVMe drive probably isn't worth the extra $$$ per GB.

So, an M.2 SATA drive, and maybe another 2.5" SATA III SSD.
Or, a single large m.2 or 2.5" SSD. Price and performance would be almost exactly the same...m.2 or 2.5" drives.

If the M.2 SATA drive is a bit more money, then go with the 2.5" drive.

All the M.2 gets you is fewer cables. Performance is the same.
