When scanning a document with my HP Laserjet 3052 how can I save it as a pdf file?

you need a program that can save pdf files, like adobe acrobat.

or use something like win2pdf that installs a printer that creates pdfs files. I'm suprised that the scanner doesn't do it as an option. Have you read the manual?

Our scanner came with software that outputs directly to PDF. For other apps we use a program called "cutepdf" that allows you to print from any program into a pdf file.
