So one is known for being of more quality over the other by brand. However are both suffice power for my editing rig? Am I actually paying another few hundred euro just for the brand with SeaSonic ? I just need performance really at the end of the day.

It is more than just brand. It is better internals like capacitors, transistors, etc which leads to better power delivery. When you buy a low tier or low quality unit, irrespective of the wattage, they have a higher probability of failure, which leads to other parts getting damaged at times. I would not trust my brand new hardware with that.
PSU is the heart of the pc, dont cheap out on it.
