Just looking to improve my old pc so I can game with my son. Currently I game over a steam link, but I will also have a separate area with monitor. I want a new graphics card, preferably so I can incorporate 4k and vr in the future. I know my set up is old but would like to keep as many components, if that's possible. I'll be getting a 4k TV soon and also a 4k monitor. Any help is appreciated as I'm a bit out of the loop and have little time to research. Budget is around £1000 (UK).
Current build :
  1. Cpu Intel i7 @2.80ghz
  2. Gpu Sapphire Radeon HD 5800 series (5850 1gb)
  3. Motherboard Asus Sabertooth 55i lga 1156
  4. Fan Noctua NH-D14 processor cooler
  5. Psu Corsair 850w HX Modular
  6. Case Coolermaster Cosmos PURE full tower case
  7. Sound card Asus Xonar Dx audio
  8. OS Windows 10 Pro 64bit
  9. Monitor LG w2486l led lcd
  10. Ram 14gb
  11. Hard drive Samsung HD 103sj Blue Ray
  12. Ssd Samsung 840 pro 250gb?
  13. Internal storage hdd 2tb

Get these components. Save $500+ and add more to it by the time you plan on upgrading to 4K and get RTX2080Ti equivalent card out then in the market. If you get RTX2070 Super or...
Something like this should be fine assuming that you can reuse the old PSU, SSDs, HDDs, and Case. I see no issues with reusing those specific parts though:

New CPU, Motherboard, RAM and GFX card, if you really want to get ready for 4k gaming. I don't think an LGA 1156 era i7 is going to be up to snuff moving forward. The GPU definitely isn't.

I think that's going to be out of my budget at the moment. Maybe I need an interim gpu. Ideally I'd like to future proof the GPU but I may need to do a proper rebuild later. Any gpus that I can use now with my current set up? About £400 to £500

That sounds good to be fair, this is 4k/vr ready? If I decide to just upgrade my gpu, with all my other existing parts, what would you recommend. Thanks

I would not recommend updating just the GPU but it would leave more in the budget for a GPU. You could get something like this:

Video Card: Gigabyte GeForce RTX 2080 SUPER 8 GB WINDFORCE OC Video Card (£708.37 @ CCL Computers)
Total: £708.37
Prices include shipping, taxes, and discounts when available

Or this (But if you could get a version of the card with better cooling that would be better than this):

Video Card: Palit GeForce RTX 2080 Ti 11 GB GamingPro Video Card (£994.64 @ CCL Computers)
Total: £994.64
Prices include shipping, taxes, and discounts when available

Ideally I would just upgrade the GPU now, spend around 700. And then later on upgrade the MOBO, cpu, etc. So the GPUs you mention will work with my current set up, and there's unlikely to be any issues?

I would go with the 2080S if you only want to spend 700 now. There should be no issues with your current build as far as I am aware. Your PSU should be able to support the new GPU. Just to be sure, is this your current PSU?

Yes thats the same Psu. So, my plan could be to buy the 2080s now and later on upgrade the rest. Any suggestions on TV (via steam link) and 4k monitor? Cheers

If you get RTX2070 Super or even RTX2080 Super you will be held back on performance. Instead get RX570 which is low mid range GPU in pairing with 1080p monitor which will not be best performance but will get you prepared for 4K step-up.
