i have been confused about getting one of these cards for a month now ... i really care about every thing ... and im planning to get the best OC Result of any of them

-Asus Strix Z270E Gaming Motherboard
-NZXT Kraken x62 Liquid Cooler
- Core i7 7700k Processor
- NZXT S340 Elite Case
-Corsair 16gb RGB 3600 MHz Memory Ram
- Western Digital black 2TB HDD

(OC mode) Boost: 1835 MHz / Base: 1695 MHz
(Gaming mode) Boost: 1809 MHz / Base: 1670 MHz

Gigabyte 1080 G1
(OC mode) Boost: 1860 MHz / Base: 1721 MHz
(Gaming mode) Boost: 1835 MHz / Base: 1695 MHz

Performance wise, they are pretty much the same.
Gigabyte one does have a little more overclocking by default, but u can easily overclock the card anyways with GPU Tweak II (If you go for Asus).

Personally, Asus > Gigabyte > MSI, so pick Asus if I were u. :)
Also, u can sync the RGB with Asus Aura Sync, and RGB looks cool so :) :) :)
(Looks like u have got some other RGB components too lol)

Best OC would be the gigabyte G1 or if you can find it, the gigabyte EXTREME, which are supposedly hand picked best chips. I've had 780 Gigabyte, 980ti G1 and 1080ti Aorus (also gigabyte) all of them can OC well, the G1 had coil whine at 200+ fps, fixed with Vsync.

Besides that, they are all at the same fps +- 1-2 fps
The previous generation had huge differences between different aftermarket coolers. 1080 doesn't.
