Took the drive out of a USB case and installed it on my server. In the USB drive the server sees the 3Tb and I'm able to use everything. When I put it in the computer I see 3 separate partitions in disk manager but was only able to add a volume to the 1.66Tb partition. There's a 349Gb GPT partition and a 746Gb unallocated partition but when I right click on them everything is greyed out.

Solution
If you initialized the disk as guid and its doing this then it doesnt sound like your motherbd supports drives larger than 2tb.

If you intialized it in the external or bought it as an external drive then they usually employ firmare tricks to make the individual partitions read as 1 large on. Try converting it to guid after you have backed up anything important on it.

U got it spot on, had to use diskpart to convert it to GPT. Disk Management won't let me do it. Then back to Disk management I see 1 single partition and created new volume from there.
