Set up a ubuntu home server without internet connection.

I am going to build a new home server this summer and upgrade from my dell dimension 8200 but my problem is I have never been able to connect to my home network without connecting to the internet. I know that ubuntu is a pretty safe way to go for virus protection but I will be backing up my windows pc's to that server and they are susceptible to viruses. I am looking for a way to connect this new pc to my network but not connect the server to the internet to protect it from attackers.
 
Solution
The simplest way is to just not put a default gateway on the device. It will then only be able to respond to other machines on the same subnet and anything that would happen to get though to the server the server would not know how to send any responses back.

so there is no way to get the server to just not be connected to the internet by turning something off?
 


what exactly is the default gateway I am somewhat new to networking.
