I'll be playing on 1080p @ 144hz but I'd like to be set for a GOOD amount of time and I'd mostly want to have my settings maxed out with the most amount of fps, what I'm looking at is the EVGA FTW's and ASUS 1070/1080 Strix's, note that I will oc at sometimes but not much.

Solution
If we can take anything away from the 9xx series it is this.

1. The 1080 will only be 15 - 18% faster than the 1070 for twice the price.

2. The 1080 will be another 'red headed step child" just like the 980 did once the Ti comes out.

3. Once prices stabilize, one might expect, two 1070s in SLI will have a lower cost per fps than the 1080 by a significant margin. However, this may not happen as CPU, RAM and who knows what may become limiting factors. In addition, where games that didnt support SLI were rare, of late, more gaming titles have FPS limits and / or console ports that the dev was happy to take his console cash and go home.

4. Still getting one 1070 for < $380 once prices stabilize makes a lot more sense than a $650...
Usually I would say for 1080p gaming the GTX 1070 is more than enough. However with you asking about 144Hz, max settings and being able to do it into the future, then you need the GTX 1080. If you are willing to turn the settings down a little (you probably wouldn't notice the difference) then the 1070 would be fine. So it's up to you as to how much you are wanting to spend.

5. The most demanding games that exist today will get you into the 80 fps range before overclocking...even Crysis 3 will get ya 70 fps at 1080p.

6. If ya upgrade to 1440 at some point and game start pushing the limits of a 1070, you could always get a 2nd one. But to my eyes, the 1080 is going to be a forgotten card .. the 1070 will rule the 1440p space and the 1080 Ti will be for 4k at reduced settings, SLI at ultra.

7. And I am talking 165 Hz monitors ... the 1070 just rocks at 1440p 165 Hz as does twin 970s....everything is above 60 fps at 1440p @ 144 / 165Hz
