Nah, leave it on. If you don't have a dedicated GPU then get one. You don't need an expensive one, but it will help with Minecraft.

Having more threads available wont hurt games, even if the game only uses 1 thread. Windows can use the other threads to lighten the load off pf the cpu. Having many threads wont hurt the game, it simply may not help it. Turning off ht on a chip with only 2 cores makes a lot less sense than turning it off on a 32 core threadripper.
