Should I buy 8gb or 16gb of RAM?

I plan on building a pc this summer on these specs:

Ryzen 5 1600
ASUS Strix b350-f motherboard
SSD: Crucial MX500 250gb
HDD: WD Blue 1tb
EVGA 1060 3gb

I was curious how much ram I should buy because I am going for the best bang for the buck pc I can make. I would like to get a 2x4gb kit and then upgrade in the future to 16gb if I need it, but I can't guarantee the new ram will be compatible with my first kit. So in that case, would it just be better to buy a 2x8gb kit now? The only reason I don't really want to is because RAM prices are very high right now.

I am going to be using this pc for college (excel, word, etc.) and a lot of gaming (all sorts of games). I do not know what I will do with it in the future.

Does anyone have an idea of what I could do?

You said it yourself. You cannot guarantee that the new kit will be compatible with the old kit, so I'd recommend getting a 16GB kit up front and not worry about it later.

Thank you. It'll probably be worth the extra money in the end. Do you have any specific kits you recommend? and what speed for a system like mine?
