[SOLVED] Should I buy a current Ryzen or wait until the new generation comes out?

The CPU I have now is pretty trash after using it for a couple years (FX 8300) so I want to upgrade to the new Ryzen CPU's, mainly because I'm on a budget and don't want to spend too much. The 5 2600x is want I've been looking at but i'm not sure if I should wait for the new generation or if I should just go with this one. I'm looking for something under $200.
Also, is it worth investing into a better motherboard or should I just go for the cheapest option?

An R5 2600, and a decent B450 motherboard, would be a massive upgrade, over what you have now. The 3600 even more so. You could wait for MSI's new B450 max boards, or the upcoming B550 boards, later this year, if you want to save up for an even bigger upgrade, like a 3700x.

My rig performs as well as a 2600x (and on most benchmarks better than a 2600x).
Paired with a GTX 1660 Ti Armor OC my PC gets anywhere from 85 to 120 fps at Ultra in current games.
I do plan to upgrade to a Ryzen 7 3700x sometime next year once all the bugs get worked out of the BIOS for my Asus ROG Strix B450-F Gaming MB.

Honestly i'm too scared to try overclocking, I don't want to burn $200 just because I want to get 5 more frames. Would you recommend that motherboard or should I spend more/less?

With the 2600, you can match the 2600x, with just matching the 2600x's multiplier, and leaving everything else stock. The 3600 and 3700x have no need for overclocking. Just get a decent cooler, and let XFR do the work. The 3700x's cooler is really good, but the 3600's does hold it back, ever so slightly. A cheap Deepcool Gammaxx 400 is enough to allow it to stretch its legs though. I would consider one for the 2600 as well.

The 3000's are out of my price range, but I also don't want to buy the 2600 and the motherboard just so a year from now I can't play a lot of games. I'm also considering whether it's future proof or not, if it isn't then I might wait longer until I can afford the 3700.

The 2600 isn't massively slower, than a 3600. Waiting till you have enough for a 3700x, is perfectly fine. I don't see the 2600 being obsolete, any time soon. Even the 1600 is still relevant, for gaming, and will be for a good while, with it being 6c/12t.

A 2600x on an Asus ROG Strix B450-F Gaming MB is a great combination if you do not want to OC.

why not spend like 40$ more and get the better bang for your buck; 2700x

A 2700x will perform even better at stock settings and only costs a tad more.
