I would say the 600p is worth the extra $10, although you do lose a little bit of space at the same time.
I'm happy with my Intel 600p, i moved from a Samsung 840 evo and didn't notice any performance improvements though.
Maybe the little extra space on the Crucial drive is better to have then the extra read speeds of the 600p.
The motherboard you picked does support NVME.
NVME drives are a lot faster on paper and in specific work loads.
The Intel 600p isn't exactly a high end NVME product, sure it has higher read speeds but that's about it, you won't see any performance difference in real world applications.

So if I purchased the intel ssd, would it plug into the same m.2 slot the crucial one wouldve went into? I remember something about plugging it in will disable other slots and I'm not sure what it meant.

Oh also I wasn't planning to get another hard drive until I actually need it and was wondering how much space would the operating system occupy? I was planning to install windows 10.

You will shave a couple of seconds off of loading times going from a Sata based SSD to the 960 Evo, Is that worth it to you? IMO it's not.

Both drives will plug into the same M.2 slot, the bios will auto detect what is plugged in.
Not sure about the B250 chipset, but on my z97 board 2 Sata ports are disabled regardless of the type of M.2 drive installed.
Check the manual or online to confirm what happens with your board.
Some board don't even support Sata based drives in the M.2 slot, so you might be forced to go with the Intel 600p.

A clean install of windows 10 uses less then 20gb of space, i assign 60GB to my windows partition and with all my drivers, programs and what not installed i've used around 35GB of space, mind you i've also disabled things like hibernation and limited the page file to 1.5GB.
