I'm looking to get a couple of pcie m.2 ssd and a larger hard drive on an x299 motherboard. I currently have a 1tb hard drive at the moment which is currently holding windows and a large steam library. I've been looking at the 1tb wd black and a barracuda hard drive to expand storage for backups. I have about $300 for the upgrade.

Solution
1tb Western digital black for the primary drive and either a western digital blue or crucial ssd not entirely sure of the size I need for a boot drive + launchers
No smaller than a 250GB drive, preferably 500GB, for Windows and your applications.
It is never "just windows + launchers".
Opinions vary.
To my mind, the only reason today to buy a HDD instead of a ssd is cost per gb.

Ideally, you would set up to use a 1tb or 2tb ssd for windows and everything that you might normally use. It is easiest to manage a single C drive space.

Use a HDD for storage of large sequential files such as videos.
Use an external HDD for backup.

Would you recommend the 500gb wd blue and 500 as the second drive?
That is entirely dependent on your space needs and budget.

The main problem is people going too small with their OS drive.
After that...either one large drive for everything, or split it out.

Different people have different wants and needs.
A single large drive is easier to manage, but more hassle if/when you need to reinstall the OS.
Multiple drives are a teeny bit more hassle to manage, but less work if/when you need a reinstall or upgrade.

As you can see from my parts list below, I'm a fan of multiples.
Each drive for a different purpose.
