Should I upgrade HP Z620 Workstation

So my girlfriend's dad took a new HP Z620 Workstation that was being thrown away at work and set it up for me as a gift. I was wondering if I should get parts and convert to a gaming PC or if I should just build a pc from scratch. Note that he did say I could sell if I want and I like the idea of building a computer.

Specs:
•Intel Xeon E5-2630 2.3Ghz 6 core processor
•Loud stock CPU cooler
•Intel 158a LGA2011 motherboard
•32gb 1333mhz ram
•MSI GT 710 gpu
•800w power supply
•Windows 10 pro
•Two 1tb HDD 7200 rpm
•And he installed two 1tb OCZ R-Drive CM84 SSDs

This is awesome (well engineered) machine.
to make it gaming, you will need a higher clocked CPU and a way better GPU.
For CPU, you can find many many second hand for around 100$. Here are the ones I'd put FOR GAMING:

The last one would be my choice and will set you for years of great gaming performance. It is about the same (actually better) as the new shinny i7-8700 (non K).

GPU choice depends on what games you are going to play and what monitor you going to use with it (resolution and refresh rate.)
