I am planning on getting an RTX 2070 or 2080 and adding another 16Gb of RAM (same as current ones).

Should I upgrade my PSU or will it hold out just fine?

It'll be fine. Unless you're pushing heavy OCs on the CPU & card, the 620W unit is sufficient.
With the CPU not having a whole lot of headroom to begin with, you're only looking at OCing the card.

A 2080 can peak to ~260W (vs the stock TDP of ~215W) +105W(ish) CPU, you're looking at a true peak draw in the ~400-450W range.
