Hi just wondering if I should upgrade to the 2600 or 2600x.
Will I notice any performance gains (FPS) or am I best to keep the setup I have now.
I only game on it no video editing or streaming and I play @1440p.
I can recycle the 1600 into a pc I am going to build for the missus later on.
PC specs below;

My CPU and GPU are water cooled in a open loop neither go above 50'c on a cool to mild day.

Acer Predator X34.
Gigabyte Aorus gtx 1080 ti
Asrock Taichi X370 (flashed with latest BIOS).
Ryzen 5 1600 OC stable at 3.8ghz 1.325v
16gb G.Skill Flare X 3200mhz
Samsung 860 evo M.2 sata drives and SSD's.
850w PSU

Solution
I wouldn't bother upgrading until the 3000 series either as 10-20% more performance is rarely worth the trouble and barely noticeable in most cases. The 3000 series will hopefully have enough architectural improvements to give it a more substantial boost over the 1000/2000 series.
