About your CPU upgrade.
i5-4690K is the 2nd best CPU you can put on your MoBo. Best being the i7-4790K. Though, i5-4690K is the best value LGA1150 socket CPU, while i7-4790K is 2nd in value.
Also, since you have Z-series MoBo and you're planning to get K-series CPU, you can OC (overclock) your new CPU to get some more juice out of it if you like.
Few comparisons,

For gaming, i5-4690K will do just fine. If you want to have the best CPU that your MoBo supports and have the money for i7 CPU, you can go with i7-4790K. Though, i7 CPUs are mostly for workstation builds (e.g video rendering) but you can also game on them just fine.
According to the today's standards, the CPU performance between Intel's 6th gen and 4th gen CPUs would be:
performance - Sylake - Haswell
low-end - i3-6100 - i5-4460
medium-end - i5-6500 - i5-4590
high-end - i5-6600K - i5-4690K
workstation - i7-6700K - i7-4790K
And now about GPU upgrade.
First off, here's GPU hierarchy table,

And few comparisons as well,

GTX 1060 3GB is the best value GPU there is. Even though the 6GB version has double the VRAM than 3GB version, the performance gain is about 6% while the price goes up by 15%.

GTX 1060 can run today's games @ 1080p with high/ultra settings with solid 60 FPS or more. If you have the money, go with 6GB version. Else-ways, go with the 3GB version.
(When i was building my Skylake, specs in my signature, i went with GTX 1060 3GB GPU. 6GB version did cost me 80 euros more than 3GB GPU and to me, the gain in performance was too small to justify the huge difference in cost.)
