Should I upgrade to coffee lake ?

I use my system primarily for gaming and light photo editing and video rendering keeping in mind that I would need to use it in some engineering graphic design. I am wondering if I should upgrade to an I5 8600k keeping in mind that I am mainly focused on gaming after all or should I just save the money and get a 1080 Ti or something since I would need to upgrade the motherboard and the ram as well with the CPU.
-My current specs.
CPU : Intel core i5 4690 with turbo clock @ 3.9 ghz
Motherboard : MSI Z97 gaming 5
Ram : 8 gbs 2x4 clocked @ 2400 mhz
Gpu : Sapphire r9 390 8gbs
Realise that the cost to upgrade a CPU and a motherboard and the ram (because ddr4) would approximately cost as much as a 1080 or a 1080 Ti in my country. I would appreciate your opinions.

You say you want to upgrade but you don't say why. How is your computer failing you? What specific improvements do you want to see in what specific games? What resolution monitor do you use?

Your rig is mainly for gaming so go for a gtx 1070, It wont be a bottleneck. I cant say about the other things you do because i only use my rig for gaming, but with this GPU you are going to notice some difference. 1080 and 1080ti will be slightly bottlenecked by your CPU so VFM is 1070.

I would just get a new graphics card. It depends on what resolution you play at to determine the right graphics card. Sub 1080p GTX 1050/ti, 1080p GTX 1060, 1440p GTX 1070, 4K GTX 1080 ti. If you want higher frame rates such as 120+ for a 120hz or higher hz monitor you need to also get a Core i7 4790K and overclock. 8GB more RAM would also be recommended if you go that route. I also recommend the extra RAM and 4790K if you get a GPU better than a GTX 1070.

No upgrade for CPU but maybe to others. RAM and GPU can be upgrade, you would consider to GTX 1070. Less TDP, more performance. Meanwhile, RAM should be 16 GB.

I am using a 1080p monitor. I want a constant 60fps gameplay with everything turned on with 2x MSAA at least plus it's the time to upgrade tho..

I just need a buttery 60fps gameplay that's why I thought of upgrading the cpu since the 390 should still have some horse power for one more year at least and then a card upgrade should be easy I think. That's how my mind worked. I recently used Heaven's benchmark ultra settings, tess. on with 8x MSAA and averaged 58.6 fps which is a very good result considering the age of the machine. So would it be worth spending the money on a gpu or a cpu ? I thought if I gave you some numbers things would be more clear. Thanks

Dilemma. You have an r9 390, one of the most demanded mining gpus there is, so brings premium prices even used, if you sell it. Bonus.

You have an r9 390, basically equitable to a gtx1060 in fps ability, so it's easily good for 1080p gaming, it's the 8Gb version, so is good for rendering by gpu. With prices of upper gtx cards currently, if that r9 390 isn't strong enough, it's going to be a hit to the wallet as the ideal upgrade would be a gtx1080/ti, anything smaller won't really show any gains.

I'm running a gtx970 OC, very similar in performance and get easily 60fps in ultra settings on every game I have, even using 4k DSR in some, at 1080p with an I7 3770k.

If anything, I'd change the cpu. Look for an i7-4790/k or a minimum of a Xeon 1270v3. The 8 thread capability is what's help the most with rendering, editing, gaming on modern games, especially the more cpu intensive ones.
