I'm upgrading my whole system and I'm between getting a 500 gb m.2 and 500gb ssd or just playing a little more and getting a 1tb m.2.

I use about 500-600 gb of space mostly for games but a good 40% is documents and other applications, will stuffing the m.2 with everything including the operating system slow it down for games or does that not even matter?

What is the better choice, having an m.2 for games and ssd for everything else or just getting an m.2 for everything on the computer? I dont mind spending the extra money on m.2

In case of needing to reinstall the OS, your personal files are safe on a different drive.

Entirely up to you, though.
Some people prefer a single drive, others like to split things.

What are the rest of the specs on this system? All parts.

I haven't yet decided between waiting for zen 2 or getting the i7 9700k which is rumored for October but let's say zen 2 for now:

Ryzen 3700x (??)
Cryorig R1 Ultimate cpu fan
Asus rog crosshair VII x470
G.skill tridentz rgb 16gb ddr4 3200
EVGA supernova 750w G3 80+gold
Asus rog strix gtx 1080 (maybe 1080 ti if price drops)
Reusing Corsair 750d
Windows 10 pro
