Should the PSU in this build be sufficient

There won't be anything else besides what is listed plus a couple USB devices.

I don't plan on SLI (at least without upgrading the PSU at the same time).

I will most likely do some minor overclocking.

Is 650W a stable PSU, or is it worth it to go a bit higher.

Great choice, that is a nice high end PSU with more than enough watts and amps to power a system with a gtx 770

It's definitely better to buy a high quality PSU that is matched to your needs than a more powerful one that is lower quality. Corsair are a great brand, and you will be happy with the results.
