I want to delete my all sim data can i be done with sim card reader

Are you talking about a SIM card or SD card? With a SIM card reader like this https://www.amazon.com/Dekart-SIM-Card-Reader-Windows/dp/B0045BIUGG you should be able to delete your data, but it's more effective to just destroy the card, easy to get another one from a cell service provider.
