Good board: Yes

Supported RAM: The list is there cos thats only what the board maker can be bothered testing. 99.9% sure ur ramz will work, as long as its the right type (ie: DDR2) and compatible speed/voltage.

Compatible products change over time too. For example, my P5B-D didnt support 1333 bus, quads or 45nm when i got it. A few bois revisions later, guess what, its supports all of them.
 
The board is good, motherboard manufactures can not test all the available memory brands there are too many, they test some to give you a general list. All ddr memory will run at a JEDEC standard speed. You might have to change some settings in BIOS to run some models at their rated speeds over the JEDEC standard.
 
I've built several C2D PC's recently using various Gigabyte boards with generic DDR2-800 and they all work fine

the memory compatibility list is only what they've actually tested as working to cover their own arses
