Single vs. Dual Xeon Processors for VM hosting

Building a new server (first one). I have a few PC builds under my belt and Im looking to move my VM's off of my regular desktop which is currently acting as a Oracle VirtualBox host to several VM's.

Im looking at moving to VMWare which is a side topic.

What I need to know is which processor motherboard configuration. Regardless of what I really need to achieve this project I am looking at two options and need to know what is more important for running several VM's concurrently (ram not considered at this time).

Looking at running a single CPU vs a Dual Proc config.

Basically, what would provide better performance, a single processor with a much higher clock rate, lower core and cache, or two processors with a lower clock rate and more cores and cache.

Also, the dual proc setup will have separate memory banks for each processor.

Im looking at the below Xeon's. 1600 Single 2600 Dual. Just a FYI the 1600 can only be run as a single processor.
