So this how my setup is going to be:

2 monitors: Dell 4k and LG Ultrawide (1080p)

Base OS is Windows 10. Ubuntu VM will be running all the time in Ultrawide monitor.

I am a casual gamer and I will be gaming in Ultrawide monitor.

My work is mostly related to C++, Java and Node programming.

i5 with overclocking with VIII Hero or i7?

Solution
Any time you're running VMs I'd opt for the i7 for sure. The additional threads will ensure things run smoothly. This also allows you to spin up more VMs down the road.
