It's a bit late but here it is, the game natively supports multi-monitor setups however it stretches the interface which breaks it, but luckily a couple of people are working to get a fix created, this video shows one of the fixes although the fix is still work in progress. I've got an extended version on the way that will continue the video for about 28 minutes of gameplay total. Once again if your monitors width is larger than 1920 pixels and you have lots of bandwidth, set the quality to original and play the video in full screen for a much higher quality.

Skyrim on the PC, Original resolution was 5040x1050 aspect ratio of (48:10). If you are running a resolution with a width higher then 1920 (30'' monitor or multi monitor) set quality to original and view in fullscreen.

This video shows gameplay from a random point in the middle of the game, using a partly finished HUD fix created by WSGF user HaYDeN. The video contains my normal annotations.
