SLI is future proof?

No GPU is futureproof, they will always improve and get better as time goes on, if anything SLI decreases the ability to futureproof, as what you may initially think gives you fantastic performance will translate into worse value for money over time.
For example, if you buy SLI 1080tis now for $700 a piece, you spend a total of $1400.
However, if you were to buy a single 1080ti now, and then a single 1180ti card later down the line, you'd probably end up with better support and performance through the single card due to SLI scaling and support problems.
Even Nvidia themselves see this, and disabled SLI on lower end cards as well as 3 and 4 way SLI to prevent users from wasting their cash.
how could anyone possibly know if adding a 2nd card in 2-3 years will help in games that will be released in 2-3 years?

with SLI it all comes down to how the game is optimized for SLI
there are games that show a 50% performance increase with a SLI setup and there are games that don't use the 2nd GPU at all.
and a variety of games where SLI results in a performance increase of 5-45% depending on the game.

generally you'll probably get a much better card in 2-3 year for the same money -- just like the 1060 made the 980 obsolete while costing half.
The support for SLI is decreasing, DX12 will add a different form of multi-GPU support but we'll have to see if a significant number of games can make use of that.
