Slow Supped Computer that is driving me insane

I am going insane, I feel like I've tried everything I can think of an my computer still gets sluggish / choppy / slow / annoying!
Explanation; I turn computer on runs fine like a champ, within the next 2-12 hours it starts getting slow and then eventually I'm brought to a crippling halt until I restart.

Basic Specs:
MB: ASRock 970 Extreme4
RAM: 16 GB DDR3
CPU: AMD FX-6350 (Vishera 6 Core)
GPU: Radeon HD 6900 2 GB
HDD: 2 - 1 TB WD Green (Can't remember) (RAID)

Things I've done:
Clean Install
Scanned Using 2 different AV
Windows Updates
Driver Updates
HDD Diagnostics
Clean Boot
Event Viewer... etc.

Please help me before I go insane.
 
Corsair CX600 aren't real high quality. But it should do.

Sensors didn't work real well - info missing. Happens sometimes with AMD mobos.

Can you get some info from the motherboard utilities (AXTU) that came on the disk with it? Your HD6900 (69??) seems to be at idle.

12V, 5V and 3.3V readings
 


PSU: That's all I could afford at the time. My old one was a 480W and I didn't think that was enough. (So I picked one that was on sale.. heh.)

So here's what I've done:
Wired all fans through motherboard.
Added second CPU fan.
Changed RAM down from 8x2 GB to 4x2 GB (4x2 sticks are listed as compatible.)
Found newer driver for optical drive.

So far that's it, I'm gonna let it run for a couple hours playing movies and games and see if I get any argument.
 


Gotcha. So I think this may have solved my problem. Does that make any sense to anyone?! (Thank you for all your help @i7Baby )
