Seems like unless I am transfering huge files, I can only manage like 500 kb/s transfer speeds on a gigabit switch, with brand new shielded cat 6 from a windows 8 machine to a windows 7 machine. When I am transfering huge files for instance an iso, I am only getting about 20-25MB/s is that normal? Seems slow for gigabit.

It is very difficult to saturate a Gigabit connection between two PCs while transferring files.

Your observed 25MBps is about 250Mbps, which is not bad when you consider that you are reading off one hard drive while competing with other reads and writes, then transferring over a network that has other traffic running on it, then writing to another hard drive that is again competing with other reads and writes.
