Question Slowing down problem with new system

I've recently built a new system with a 5600x and stock cooler. I was working this morning and everything started running very slowly for about a minute or 2 maximum. My mouse cursor was very jittery and sound was also cutting in and out. I was not doing anything too heavy - I was tutoring over a call with about 3-4 chrome tabs open. I opened up hw monitor and it said CPU temp was at 75 when it had been working at around 50 before that. CCD temp spiked to 80. I've read that the temp spikes are normal and it's fine as long as they don't go past 90, but should I worry about it slowing down for that minute or 2?

I haven't done any gaming on this PC yet so idk if I'm safe to or whether I should change some settings before so. If so, can someone recommend how/what to change?
I realised last night that I put some fans on the wrong way around so I changed them and I think this is the first time it happened. I'm also on ultimate performance power plan and windows 11 if that matters - I upgraded from W10 to W11 last night as well.

75c while its not even under load is not good. You should adjust the fan curve so its a bit more aggressive.
Once so, your temps should decline, possibly your jittering as well, and you can try out some games to see how they perform.

I'd still not have high hopes, as even if the fan curve is set to a more aggressive config, it could still have high temps while under load.

Q: Are you sure you applied a good amount of thermal paste, and if so, correctly?

I made the fans more aggressive and temps have been stuck around 50-60 while I was working. Tried to load up The Finals and temp rose to 95 so I ended it in task manager after that. Going to order some new paste now. Can you recommend any air coolers for around £30?
